What Happens to Food When You Cook It? Does Cooking Destroy Nutrients?
Cooking changes food, but does it actually destroy nutrients? The answer depends on the nutrient, the food, the cooking method, and factors such as heat, water, and cooking time.
Water-soluble vitamins, including vitamin C and certain B vitamins, may decrease during cooking, particularly with prolonged heat or methods such as boiling. Other nutrients and beneficial plant compounds can become more available as cooking breaks down food structures. Minerals are generally heat-stable, and cooking can also improve digestibility and nutrient absorption.
Different cooking methods have different benefits and considerations. Steaming and microwaving use little water and relatively short cooking times, which can help preserve certain nutrients. Roasting, grilling, sautéing, and air frying create flavors and textures that may make nutritious foods more enjoyable. Boiling can cause some water-soluble nutrients to move into the cooking liquid, while using that liquid in soups and other dishes can help retain them.
Cooking also plays essential roles in food safety, digestibility, flavor, and making many foods edible.
There is no single healthiest cooking method. Eating a variety of foods prepared in different ways matters more than small differences in nutrient retention between cooking methods.
